Fiano sourced from Whites Valley in the Willunga foothills. Organic/Biodynamic in-conversion and certified SWA (Sustainable Winegrowing Australia).
Our third La Niña event in a row brought with it our wettest November in 30 years, as well as our latest vintage start to date. This meant higher than average disease pressure which was somewhat mitigated by significant winds from spring through to autumn. Yields were down across the district, but quality prevailed.
A single handpicked parcel was gently pressed, keeping the pressings separate for a long slow fermentation. Then a small portion was blended back in to add structure and mouthfeel. Fermented dry, racked and filtered prior to bottling.
